Chopped Avocado Salad

This chopped avocado salad is the perfect combination of crispy greens and tender avocado. It has so much natural flavor that you don’t even need any dressing, although the one provided below is delicious.

4 CUPS CHOPPED ROMAINE LETTUCE

1 CUP HALVED CHERRY TOMATOES

1 SWEET ORANGE PEPPER, SEEDED AND CHOPPED

½ SMALL RED ONION, CHOPPED

3 TABLESPOONS FRESH LIME JUICE

3 TABLESPOONS FRESH LEMON JUICE

2 TABLESPOONS EXTRA-VIRGIN OLIVE OIL

½ TEASPOON SEA SALT

¼ TEASPOON GROUND CUMIN

1 RIPE AVOCADO, PEELED AND PITTED

FRESHLY GROUND BLACK PEPPER TO TASTE

1. In a large bowl, combine the lettuce, tomatoes, orange pepper, and red onion. Toss well.

2. In a small bowl, whisk together the lime juice, lemon juice, olive oil, sea salt, and cumin.

3. Add the dressing to the salad and toss to coat.

4. Chop the avocado and spread it on top of the salad.

5. Serve with freshly ground black pepper.
